Rocky Road Protein Bites


So, apparently today is National Chocolate Day. HOORAY!

Given how Teresa and I are both utter chocoholics, I have no idea how this escaped our attention. But, escape our attention it did. Or at least until the wonderful NUTrition emailed and challenged me to create something, just for this special day.

For those of you who haven't come across them before, NUTrition are the creators of the most incredibly delicious nut butter, Cleantella. It's pretty much exactly how it sounds - a healthy, protein-packed version of Nutella (have I got you drooling yet?) which works wonders in all manner of healthy recipes. It also tastes amazing warmed up as a sort of chocolate fondue...

Anyway, I decided to whip up these Rocky Road Protein Bites as they're ridiculously easy, very fast to make and utterly delicious.

Granted, they aren't the prettiest looking energy bites in the world, but they're pretty darn tasty! This is a great, healthy snack for those who are pressed for time, and it's so easy to adapt to make whatever is in your cupboard too.

ROCKY ROAD PROTEIN BITES

Rocky Road Protein Bites

Ingredients:
(Makes 8 bites)
110g oats
1.5 scoops rocky road (or chocolate) protein powder
3 tbsp Cleantella, slightly melted
3 tbsp desiccated coconut
1 tbsp honey
0.5 tbsp cacao
2 tbsp coconut milk
16 sugar-free mini marshmallows
Handful raisins
Handful dark chocolate chips (I used 95%)

Method:

1) In a large bowl, mix together the dry ingredients, then slowly stir in the almond milk and honey. If you find the batter a little dry, add a touch more milk or Cleantella. If it's too sticky, add more oats, protein powder or cocoa. Roll into truffle-sized balls, then place in the fridge to set.
