I can't remember the last time I baked monster, unhealthy cookies.
In fact, I can't even remember the last time I ate any.
You see, when you can make clean, healthy eats like these Salted Caramel Chocolate Protein Cookies, who needs the unhealthy, sugar-loaded kind?
I made these cookies with my absolute favourite new discovery - Hognuts Butters. An amazing, family-run business, Hognuts creates artisan nut butters (yeah, you know how much of a nut butter fiend I am!) such as Chocolate Caramel Peanut Butter, Cinnamon Bun, Maple Pecan and Coconut and Cashew. If you're a PB addict like me, you NEED these in your life!
Anyway, loaded with sweet and salty chocolate goodness, as well as a crunch of nuts, protein powder and chocolate chips to top it off, these are the perfect post-workout gym treat. Brilliant fresh from the oven with a steaming mug of black coffee...

HOMEMADE SALTED CARAMEL PROTEIN COOKIES
Ingredients:
190g Hognuts Salted Caramel Peanut Butter (or use your favourite PB)
1 egg
5 tbsp raw honey
2 tbsp chocolate protein powder
1 tbsp coconut flour
1 tbsp Walden Farms Caramel Syrup
1 tbsp coconut milk
1/4 tsp salt (or to taste)
Handful dark chocolate chips
Method:
1) Preheat the oven to 180C, then grease and line a baking tray. Combine the ingredients in a bowl (adding a splash more milk if the mixture is slightly stiff), then place in the fridge for 15 minutes.
2) Remove from the fridge, then drop heaped spoonfuls of the dough onto the baking tray and bake for 7-9 minutes, or until cooked through. Don't overcook though - you want it to stay ever so slightly gooey!
