Healthy, Gluten-Free, Low-Carb Banana Bread


So, by now, you probably already know that I'm obsessed with banana bread. We buy bananas by their hundreds (seriously) in our house, so it goes without saying that we're always left with overly-ripe fruits come the end of the week - perfect for baking!

For a long time, I was utterly obsessed with my recipe for Best Ever Banana Bread. However, it's full of refined sugars and vegetable oil, so not quite the healthiest - and since my toddler adores it, I set to creating a healthy, gluten-free, low-carb version!

I spent a loooooong, long time working on this Healthy Banana Bread Recipe, and now (sorry to blow my own trumpet and all that!) I think it's perfect. Made using low-carb coconut flour and protein-packed chia seeds, this is a wonderful guilt-free treat.

HEALTHY, LOW-CARB BANANA BREAD



Gluten-free banana bread

Ingredients:
2 large ripe bananas, mashed
40g coconut flour
3 eggs
2 tbsp honey 
2 tbsp chia seeds
2 tbsp Cleantella or homemade Nutella or dark chocolate chips
1 tsp vanilla extract
3/4 tsp bicarbonate soda
Pinch salt 


Instructions: 
1) Preheat oven to 180C and grease and line a loaf tin. Mix the eggs, honey and vanilla into the mashed bananas until combined.
2) In a separate bowl, whisk together the flour, chia, salt, bicarbonate of soda and coconut flour. Pour into the wet ingredients and stir until incorporated.
3) Next, gently melt the Cleantella until it's runny, then stir through the banana bread mixture. Pour into the prepared tin and bake for 50 minutes, covering the top with baking paper halfway through if browning too quickly. Allow to cool, serve and enjoy!
