Saintly Tuesdays - Protein Brownie With Peanut Butter and Greek Yoghurt Frosting


I don't think anything in the world beats baking a scrumptious, delicious, chocolatey pudding which tastes like heaven. Except when you bake a scrumptious, delicious, chocolatey pudding that tastes like heaven and also happens to be pretty healthy...

That's a good feeling to have, right?

It's safe to say that when I made these Protein Brownies, I was beaming from ear to ear. Especially when I topped them with this healthy Peanut Butter and Greek Yoghurt Frosting. Pretty impressive, right?

Since they are made in the microwave, you can literally whip these Brownies up in seconds. Which also means you'll be making them a LOT. Well, they get made daily in our greedy household, anyway...

PROTEIN BROWNIE WITH PEANUT BUTTER AND GREEK YOGHURT FROSTING


Protein Brownie Recipe

Ingredients:
(Serves 1)

For the Brownie:
1 scoop Chocolate Protein Powder
4.5tbsp coconut flour
2 tbsp unsweetened cocoa
3 tbsp maple syrup
1 egg
2 tbsp coconut oil, melted
30g dark chocolate, melted
1 tsp vanilla


For the frosting
100g Total Greek Yoghurt (I used 2% Fat)
1-2 tbsp natural peanut butter, to taste (I like Meridian)
1 tbsp maple syrup
1 tbsp Quark
1 tsp vanilla extract


Method:

1) To make the brownie, combine all of the ingredients in a bowl and pour into a ramekin or mug. Microwave for 45 seconds, or longer depending on your microwave.

2) In the meantime, beat together the greek yoghurt and peanut butter for a few minutes until combined and creamy. Add in the maple syrup, Quark and vanilla and beat until you get the consistency you want. Smother on top of the Brownie and enjoy!
