Healthy Takeaway - Slow-Cooked Beef and Spinach Curry


As regular readers will know, I love a bit of spice. In my curry, obviously.

Each week - especially now the colder nights are drawing in - I like to make us up a huge vat of healthy, comforting food. And to us (well, my husband is Indian!) nothing says comfort like an Indian.

This time, I whipped us up this delicious Slow-Cooked Beef and Spinach Curry. Left to simmer for three hours, this is a wonderfully rich dish and melt-in-your-mouth tender. Perfect for those evenings where you just want to snuggle on the sofa and chow down on comfort food.

I served mine up with healthy Cauliflower "Rice" (click here for the recipe) which made it feel even naughtier than it was, but you can dish up with anything you like!

SLOW-COOKED BEEF AND SPINACH CURRY



Ingredients:

2 tbsp coconut oil
750g diced beef
One inch ginger, peeled and grated
Pinch garlic salt
Two garlic cloves, minced
Two small onions, diced
Two red chillies, deseeded and chopped
1 tbsp cumin
1 tbsp ground coriander
1 tsp ground turmeric
1 tsp chilli powder
1 tbsp tomato purée
One can chopped tomatoes
One cup coconut milk 
One beef stock cube
100g bag spinach
Method:

1) Place the ginger, garlic and onions in a food processor and blitz until it forms a paste. Then heat your coconut oil in a pan and add the paste, chilli and garlic salt and cook for 3 minutes, stirring often. 

2) Tip in the spices and cook for further few minutes, then add the beef and fry until browned. Next, stir in the tomatoes, milk, tomato purée and bring to a simmer. Crush the stock cube in, then cover and slow cook for two to three hours until the beef is tender.

3) Before you serve, add the spinach and cook for another 15 minutes. Serve with Cauliflower Rice (see notes above) or with boiled Jasmine Rice.
