Saintly Tuesdays - No-Bake Carrot Cake Energy Bites


I absolutely love Energy Bites and make up a batch every single week without fail. 

For ages (as in YEARS), I only ever experimented with various nut butters, with these Chocolate Coated Peanut Butter Balls my fail-safe and absolute favourite.

However, recently, I've started to try out different flavours and textures. My newest discovery are these delicious No-Bake Carrot Cake Energy Bites. Made using the same spices found in traditional carrot cake (cinnamon, ginger and nutmeg), these little cakey bites give a wonderful energy boost to help you through the afternoon.

The raisins and coconut add a real sweetness to these Bites, while the optional chocolate chips give chocoholics a bit of a treat too.

My son also happens to go crazy for these bites, which is great when he's pretty darn resistant to anything veggie-based normally. What are your favourite energy bite recipes?

NO-BAKE CARROT CAKE ENERGY BITES

Energy Bite Recipes


Ingredients:

100g oat flour (or oats, blended in a processor)
50g desiccated coconut
50g chopped nuts
90g chopped dates, soaked in water and then blended in a processor
3 tbsp honey
1 tbsp Lucy Bee coconut oil
1 tsp vanilla
1 small carrot, finely grated
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1 pinch ground cloves
Large handful raisins
One packet dark chocolate chips (optional)

Method:

1) In a processor, mix together your oats, coconut, nuts, dates and vanilla until combined.

2) Next, melt together the honey and coconut oil in a microwave, then pour into the processor along with the spices and carrot, pulsing to combine. Stir through the raisins and chocolate chips (if using), then form into small balls. If the mixture is too sticky, add more oats. If it's too dry, add more coconut oil or a splash of milk.

3) Place in the fridge, leave to set, then enjoy!
