Saintly Tuesdays - Dark Chocolate And Blueberry Protein Truffles


As soon as my hubby tried these, he declared them to be his new favourite. Ever.

Yep, so delicious are these Dark Chocolate and Blueberry Protein Truffles that they have already gone down in house history. Beating off competition from my Molten Chocolate Cake and Peanut Butter Energy Bites, they are utterly delectable - but super healthy.

Created with fresh blueberries, Super Vitality's amazing Super Protein Blueberry smoothie powder and, my new favourite, coconut flour, these beauties are then enrobed with sumptuous dark chocolate.

Sweet, tasty, yet oh-so-healthy, these protein truffles get the thumbs up all-round.

Just don't expect them to stay around for long.

DARK CHOCOLATE AND BLUEBERRY PROTEIN TRUFFLES


Dark Chocolate And Blueberry Protein Truffles


Ingredients:
2 scoops Super Protein Blueberry powder
3 tbsps coconut flour
Handful fresh blueberries
1 tbsp maple syrup
2 tsp vanilla extract
1/4 cup almond or coconut milk
200g good quality dark chocolate, finely chopped (I use Lindt)

Method:

1) Mix together the protein, coconut flour, maple syrup, vanilla and milk until you have a dough-like mixture (if it's too sticky, add a touch more protein powder or coconut flour. Too dry, add a drop more milk). Fold in the blueberries, then roll into truffle-sized balls. Place in the fridge to set for at least 30 minutes.

2) Remove the truffles from the fridge, then melt the chocolate in a bain marie. Roll each truffle into the melted chocolate, then place back in the fridge to set once more. Eat and enjoy!
