Saintly Tuesdays - No Bake Healthy Chocolate Nut Cookies



I will never ever tire of whipping up healthy, delicious treats to fuel me through the afternoons.

These No Bake Chocolate Nut Cookies are super nutritious and contain no refined sugar, making them great for kicking that sweet tooth to the kerb.

Better still, they taste really, really bad for you - kind of like eating a rich, sumptuous chocolate cookie, only with none of the guilt involved!

So, what's in them? Containing my favourite Lucy Bee coconut oil, deliciously salty peanuts and peanut butter (yes, I'm enrolling into PB rehab, don't worry!), raisins and honey, these are little bites of perfection. However, since you won't be able to resist diving in for more than one (I managed to eat 5 in milliseconds), they probably aren't that good for you.

P.S Since they contain coconut oil, these cookies melt at room temp - just be warned!

NO BAKE HEALTHY CHOCOLATE NUT COOKIES


Healthy chocolate cookies


Ingredients:
170g honey
30g unsweetened cocoa powder (I love Green and Blacks)
50g Lucy Bee Coconut Oil
220g smooth peanut butter
Pinch salt
Small handful raisins
2 tbsp chia seeds
2 tbsp flax seeds
180g dry roasted peanuts

Method:
1) Line a baking tray and set aside. Melt together the honey, cocoa and coconut oil on a low heat, then allow to boil for a minute. Turn the heat down, then stir in the peanut butter and salt until smooth.

2) Take the saucepan off the heat, then add in the raisins, peanuts, flax and chia seeds, stirring until completely coated. Drop tablespoons of the mixture onto the prepared tray, they place in the fridge to set. Et voila, enjoy!
