Thursday Treats - Chocolate-Dipped Peanut Butter Pretzels


When I posted this picture of Chocolate-Dipped, Peanut Butter Pretzels online last week, Twitter went all kinds of crazy. Who knew there were so many sweet and salty addicts out there?


Combining the world's best flavours (chocolate, peanut butter and salt), these little bites are so moreish and so delicious that you won't have any left over. In fact, you won't even want to share.

They make not need baking and you may also be able to whip these up in minutes, but don't let that fool you. I seriously think that these little pieces of food porn are heaven-in-your-mouth.

Better yet, I bet you have all the ingredients just lingering in the back of your cupboard, waiting for you to get making.

CHOCOLATE-DIPPED PEANUT BUTTER PRETZELS




Ingredients

280g smooth peanut butter (not the natural kind)
1 tbsp unsalted butter
120g light brown soft sugar
100g icing sugar
1/2 tsp vanilla extract
One pack mini pretzels
300g chocolate (I used a mix of dark and milk)

Method

1) Using a mixing bowl, beat together the peanut butter and butter until smooth and combined. Beat in the sugars and vanilla until just combined.

2) Spoon a teaspoon of the peanut butter dough onto a mini pretzel, then sandwich another pretzel on top and press together gently. Repeat until you run out of peanut butter (this happens pretty darn quickly if, like me, you start to eat it as you go).



3) Melt the chocolate in 30 second blasts in the microwave, then dunk the pretzel bites into the chocolate. Place on a lined baking tray, then leave to set in the fridge.
