Chocolate Fruit and Nut Christmas Fudge (Vegan, Paleo)


In my rather greedy eyes, it's not Christmas until there's fudge on the table. Beautiful, sweet, velvety, melt-in-the-mouth fudge. And lots of it.

One of my favourite and most popular recipes is my Chocolate Orange Protein Fudge, which I created for the vegan protein company, That Protein (click here for the recipe). However, I wondered how I could mix it up a little, and add all of my favourite festive flavours.

This incredible Chocolate Fruit and Nut Christmas Fudge was the result. And, wow, is it addictive! Even the most ardent of full-fat, sugar lovers will fall for this, without even knowing that it's healthy.

Made using nut but, anti-oxidant rich cacao, chopped nuts, spices and all manner of goodness, this is Christmas food at its healthiest. And most delicious.

CHOCOLATE FRUIT AND NUT CHRISTMAS FUDGE


paleo fruit and nut fudge

Ingredients:
1/3 cup + 1 tbsp peanut butter
1/2 cup Lucy Bee coconut oil, softened
1/2 cup Lucy Bee cacao
1/4 cup maple syrup (or honey)
2 tbsp Sukrin zero icing sugar
1 sachet Love Your Blender spicy cacao (optional, but adds a wonderful ginger flavour)
2 tsp orange zest
1 tsp vanilla extract
1 tsp ready-brewed Christmas coffee (I use Littles)
Pinch salt

Flavourings:
Large handful raisins
Large handful orange-soaked cranberries
Large handful chopped nuts

Method:
1) Start by blending together the peanut butter and coconut oil until smooth and glossy. Add in the remaining ingredients and blend until smooth once more. Stir through your flavourings, then press into a lined loaf tin and place in the fridge to set overnight. Cut into squares and enjoy!
