There aren't many flavour combinations in the world that I love more than chocolate orange. And as the temperature starts to plummet and Christmas creeps ever closer, what could possibly be more perfect than gobbling (elegantly, of course) everything chocolate orange?
I've had a bit of a craving for brownies lately. Perhaps, at 37 weeks pregnant, all I want is comfort food. Or, more likely, I just want all the chocolate. Anyway, these Fudgy Chocolate Orange Brownies combine those ever-classic flavours in the best possible way.
Better still, as decadent and as indulgent as these wonders taste (they have a chewy top and gooey, rich underbelly), they're about as healthy as brownies can get. Plus, they're vegan, paleo and gluten-free too...not that anyone would ever guess!

FUDGY CHOCOLATE ORANGE BROWNIES
Ingredients:
100g dark chocolate (vegan, if needed)
1.5 tbsp Lucy Bee coconut oil
1/3 cup tapioca flour
Juice one orange, plus zest of half the orange
2 tbsp maple syrup
1 cup Coconom coconut sugar
1 1/2 cups + 1 tbsp ground almonds
Two handfuls dark chocolate chips
Pinch Himalayan sea salt
Method:
1) Preheat oven to 170C, then grease and line a loaf tin. Gently melt together the chocolate and the coconut oil, stirring until smooth, then set aside. In a separate bowl, beat together the tapioca flour, orange juice and zest and maple syrup, before stirring in the melted chocolate mixture.
2) Fold in the coconut sugar and ground almonds, then stir through the dark chocolate chips. Pour into the loaf tin (or you may have to spoon instead - the mix can be a little thick) and then bake for 25 minutes, or until the top is hard and the centre ever so slightly gooey. Leave to cool before slicing and enjoying.
