No-Bake Protein Cookie Dough Sandwiches (Vegan, Gluten-Free)


For anyone looking to add a touch more protein to their diet, chickpeas are a wonderfully cheap and versatile option to add to dishes without splashing the cash or heading straight for the meat aisle.

Amazingly, these humble little pulses also work brilliantly in all manner of desserts and puds. You can use them in cakes and bakes, you can turn them into a healthy chickpea cookie dough, or you can use them in my No-Bake Protein Cookie Dough Sandwiches.

Trust me, it works...

Cookie dough sandwiches

Vegan friendly, gluten-free and simple to whip up, these little bites of deliciousness spun my kids into a frenzy. They're not overly sweet, so those with a sweeter tooth may want to add a touch more sweetener. However, they are seriously delicious!

NO-BAKE PROTEIN COOKIE DOUGH SANDWICHES


Chickpea cookie dough


Ingredients:
1 can chickpeas
1/2 cup almond flour
1/4 coconut flour
1/3 cup Sukrin zero icing sugar (or more, to taste)
2 scoops vanilla protein powder (vegan, if necessary)
3 tbsp Nuts n More white chocolate peanut butter
Splash coconut milk
1 tbsp vanilla extract
3/4 cup dark chocolate chips

Homemade Nutella (or Jim Jams chocolate spread), for sandwiching

Method:
1) Place all ingredients (except the chocolate chips) in a processor and blend smooth. Don't overblend, as your mix will end up too runny! If it's still a bit runny, add a touch more flour. Too dry, and you want more milk.

2) Fold in the chocolate chips, then roll into balls and place on baking paper. Flatten with the back of a spoon (you may need to chill or freeze your balls ever so slightly first), then dollop your Nutella or chocolate spread over half of the cookies.

3) Sandwich with another cookie, then place in the fridge to set and enjoy!
