I get an urge to sometimes just eat and eat and eat pasta (and cheese! Always the cheese) and, no matter how full I get, I still want more. Pasta is just the perfect comfort food. It's satisfying, indulgent and leaves you feeling happy. Happy and full.
Who wants an empty belly?
This One Pot Chicken Tomato Pasta is a fantastic meal for weekday evenings. Not only is it healthy, delicious and quick to make, but it also comes with minimal washing up - just one pot! What's not to love?
I made this using my favourite Rizopia spaghetti. Rizopia is one of my food cupboard essentials and I cannot rave about it enough - gluten-free and made out of just brown rice and water, yet somehow it manages to taste EXACTLY like ordinary pasta.

ONE POT CHICKEN TOMATO PASTA
Ingredients:
10 chicken sausages (I love Heck), cut into small bites
1 garlic clove, minced
1 tsp mixed herbs
1/2 - 1 tsp chilli flakes
1 tin chopped tomatoes
1 cup of water
350g Rizopia brown rice spaghetti, broken in half
1/2 glass red wine (optional)
100g cherry tomatoes, chopped
Handful fresh basil
1/2 tsp salt
Pinch black pepper
1/4 cup nutritional yeast (or add cheese!)
1/2 lemon and basil leaves, to decorate
Method:
1) Take your largest pot or saucepan and fry the sausages in oil until lightly browned. Add the garlic, mixed herbs and chilli flakes and fry for another few minutes.
2) Tip in your chopped tomatoes, water, spaghetti and wine, if using, then give a good stir. If the liquid doesn't quite cover the pasta, you may need to add more water. Throw in the tomatoes, basil and seasoning, then bring to the boil and reduce to a simmer, cooking until the sauce has reduced and the pasta is cooked (10 - 15 minutes).
3) Stir in the nutritional yeast or cheese until melted, then dish into bowls. Top with extra basil and a squirt of lemon juice and enjoy!
