Orange Loaf Cake With Cream Cheese Frosting (Gluten-Free, Low Carb)


I love cake. I really, honestly and truly love cake.

In fact, if I had my way, it would be all that I'd eat. I'd be the size of a house but, heck, I'd sure be one happy house.

Thankfully, the genius people over at Sukrin have invented a cake mix which means I won't become the size of a house when I make cakes. Oh no.

I did feel a little bit like a cheat when I first tried Sukrin's incredible sugar and gluten-free cake mixes. However, they're such an easy, guilt-free way to enjoy cake, and they quickly won me over.

Although the mix can be adapted to include whatever flavourings you fancy (chocoholics, this means you!), it's easy peasy to throw together and is fantastic for anyone pressed for time. Of course, it's also ideal for those who aren't blessed with baking skills (I'm looking at my boyfriend right NOW).

Using one of the Sukrin free-from cake mixes, I whipped up this incredible Orange Loaf Cake With Cream Cheese Frosting. And, let me tell you, it tasted divine.



Packed with flavour, incredibly sweet (how do they do it when the cake mix is so low carb?) and moist as anything, I was seriously impressed by Sukrin's genius. I mean, how can you make such a scrumptious cake from sesame flour?

ORANGE LOAF CAKE WITH CREAM CHEESE FROSTING


Orange Loaf Cake

Ingredients:
1 packet Sukrin cake mix
75ml Lucy Bee coconut oil, melted
3 eggs
150ml water
Zest two oranges

For the orange sugar syrup:
Juice 3 oranges
3 tbsp Total Sweet xylitol

For the cream cheese frosting:
250g extra light cream cheese
1 tsp vanilla extract
200g Sukrin icing sugar

Method:

1) Preheat your oven to 180C then grease and line a loaf tin. Start by making your cake by mixing together the eggs, water and coconut oil. Mix in the cake mix and orange zest until smooth, then tip into the loaf tin and bake for 25-30 minutes, or until cooked through.

2) As the cake is baking, make your sugar syrup by heading together the ingredients on a medium heat until a thick syrup forms. Set aside.

3) Once your cake has cooked, prick it all over with a fork, then, using a pastry brush, liberally brush the sugar syrup over the top (you won't use all of it, but don't worry!). Leave to cool completely.

4) While the cake is cooling, beat together the ingredients for the cream cheese frosting until light and fluffy. Using a palette knife, spread over your cooled loaf cake, then cut into slices and enjoy.
