Seriously guys, I honestly think I have a problem.
I mean, I can't seem to get through the week without creating something peanut butter-based, or at least buying another tub of the stuff (I currently have over 20 jars stacking my food cupboards).
Anyway, I'm all for peanut butter cookies, muffins or other various bakes, but sometimes...sometimes, you just want something a little easier, right? With no need for multiple mixing bowls or even the food processor.
This Easy 3-Ingredient Peanut Butter Fudge takes about five seconds to prepare (a little longer to set!) and is utterly delicious. Made using just coconut butter, peanut butter and honey, it's also vegan, Paleo and friendly for all manner of other diets.
If you fancy having a go at making your own coconut butter also (much cheaper), then go wild! The recipe could not be easier. You simply blend dessicated coconut in a high-speed processor until it goes butter-like and smooth - easy!

THREE INGREDIENT PEANUT BUTTER FUDGE
Ingredients:
1/2 cup coconut butter (make your own or I love Vanilla Cupcake Coconutter from here)
5 tbsp creamy peanut butter
2 tbsp brown rice syrup (or honey for non-Vegans)
1 tsp vanilla extract (optional)
Method:
1) Gently heat the coconut butter, peanut butter and honey together until melted and combined. Pour into a lined tin (I use a loaf tin), smoothing the top over, then place in the freezer until set. Cut into squares and store in the fridge.
