Anyway, when I finally got my mitts on some of Sci-Tec Direct's incredible white chocolate and pistachio whey protein, I knew exactly what I was going to create. White Chocolate Pistachio Protein Cookies...hI mean, just how scrumptious do these look?
I originally made them with this delicious White Chocolate Hazelnut Spread from Protein Pick and Mix, but then Hognuts only went and created one of the most delicious nut butters I've ever tried - Pistachio Ice Cream Cashew Butter.
Perfect! What could be better to test out that nut butter dream than with these healthy, scrumptious cookies? Made free from refined sugars as ever, and also easy to make Paleo (just use ground almonds instead of oats), these cookies are my new favourite. They even got the toddler thumbs up!

WHITE CHOCOLATE PISTACHIO PROTEIN COOKIES
Ingredients:
(Makes 10 cookies)
1 cup oat flour
1/2 cup Sci-Tec Direct White Chocolate Pistachio Whey
2 tbsp Sukrin coconut flour
1/2 tsp bicarbonate soda
1/3 cup Coconom coconut sugar
2 tbsp stevia
1 egg
1/2 cup Lucy Bee coconut oil, melted
1/2 cup Hognuts Pistachio ice cream cashew butter (or white chocolate nut butter), gently melted
1/2 cup sugar-free white chocolate chips
1/2 cup pistachios, chopped
Method:
1) Preheat oven to 180C, then grease and line a baking tray. In a large bowl, mix together the oat flour, whey, coconut flour, bicarb, stevia and coconut sugar.
2) In a separate bowl, lightly beat the egg, then stir in the coconut oil and nut butter. Fold into the dry mixture until just combined, then stir in the chocolate chips and pistachios.
3) Dollop spoonfuls of the mixture onto the prepared baking tray to form each cookie, then bake in the oven for 8-12 minutes, depending on how crispy you like your cookies. Leave to cool, then enjoy!
