Some may say that I'm a peanut butter addict. And you'd be right.
At last count, I discovered that I had 19 (yes, 19!) nut butters stocking my cupboards. This was on the same day that I opened and devoured a tub of peanut butter using only my finger as a spoon. Sexy I am not.
Anyway, enough of my disgusting habits.
Fellow nut butter lovers will adore these Chocolate Peanut Butter Energy Bites, which are a fantastic snack to have on hand throughout the day. Not only are they full of protein and healthy fats, which are great to keep you fuelled for manic days or workouts, but they also taste amazing - and I guarantee that you won't be able to stop at one.
Made with my favourite Hognuts nut butters, these moreish little bites are my current favourite treat and are simple to adapt to your own favourite flavours, tastes, or simply to adjust to whatever you have in your cupboard.

CHOCOLATE PEANUT BUTTER ENERGY BITES
Ingredients:
200g chocolate peanut butter (I used a combination of Hognuts Mississippi Mud Pie & Bourbon Vanilla Crunch)
2-3 tbsp honey
2 tbsp Lucy Bee coconut oil
1 tbsp Choc Shot
1 tsp vanilla extract
100g rolled oats
3 tbsp flax seed
1 tbsp Creative Nature cacao
Handful dark chocolate chips
Handful chocolate covered goji berries
Handful raisins (optional)
Method:
1) In the microwave, melt together the peanut butter, honey and coconut oil in 20 second blasts until combined (around one minute). Stir in the Choc Shot and vanilla extract.
2) Stir the rolled oats, flax seed and cacao into the peanut butter mixture, adding more honey to taste if needed, then throw in your added extras (the chocolate chips, goji berries and raisins) and mix well.
3) Roll the mixture into balls. If the mix is too sticky, then stir in more oats or flax. Leave to set, then enjoy!
