Spooktacular Halloween Protein Brownies


I really am an overgrown kid at heart. Give me the chance to make themed and cheesy food, and I'm there.

For me, special occasions are all about the food. Christmas, for example, is for Snowman chocolate truffles. Easter, and it's Creme Egg brownies all the way. Halloween, meanwhile, is for all things pumpkin (click here for my favourite pumpkin recipes) and these spooktacular Halloween Protein Brownies.

Anyway, I simply couldn't resist turning my favourite homemade protein brownies into these little ghosts. Because, well, why not? Free from refined sugars, gluten and any processed ingredients, they also happen to be about as guilt-free a treat as you can possibly get.

Trick or treaters are definitely not getting any candy from my house...

SPOOKTACULAR HALLOWEEN PROTEIN BROWNIES

Ingredients:
(Makes 8 brownies)
For the brownie:
1/2 cup Sukrin reduced fat almond flour
10 tbsp Creative Nature cacao
4 scoops chocolate whey protein
3 tbsp coconut sugar
Pinch salt
2 eggs
300g unsweetened apple puree
1 tbsp Choc Shot
1 tbsp vanilla extract
2-3 drops Capellas chocolate fudge brownie drops
50g 95% dark chocolate
4 tbsp Lucy Bee coconut oil
2 tbsp Hognuts bourbon vanilla crunch nut butter

To decorate:
8 sugar-free marshmallows
8 squares sugar-free chocolate
1 tbsp Lucy Bee coconut oil
Black icing

Method:
1) Preheat the oven to 180C, then grease and line a loaf tin. In a bowl, mix together the almond flour, cacao, whey protein, coconut sugar and salt. In a separate bowl, whisk together the eggs, then stir in the apple puree, choc shot, vanilla extract and brownie drops.

2) Gently melt together the dark chocolate and coconut oil, then stir into the egg mixture along with the nut butter. Pour the lot into the almond flour, then stir until combined. Tip the brownie batter into the loaf tin, then bake for 20 - 25 minutes, or until cooked through. Be warned though, you still want it to be gooey!

3) Once the brownie has cooked, set it aside and leave it to cool. In the meantime, ice your marshmallows with spooky faces. 

4) Once the brownie has cooled, cut it into squares, then gently melt your white chocolate with the coconut oil. Drizzle the chocolate over each brownie square, then top with a ghost face. Leave to set, then enjoy!
