We all know by now that I am a nut butter addict. If you don't, where have you been?
I've been longing to create some healthier, lighter ice creams for a while now, but never quite got around to it. I know I've missed the boat for it in terms of the weather, but never mind! These Chocolate Chip Cookie Dough Protein Ice Creams are perfect for munching instead of Magnums in front of the XFactor (yes, I know - don't judge) at the weekend.
Created using pure, healthy ingredients, including banana to create the "ice cream" texture, these are also a firm favourite with my toddler (I just substitute the protein for cacao, or something similar).

CHOCOLATE CHIP COOKIE DOUGH PROTEIN ICE CREAMS
Ingredients:
(Serves 4)
2 bananas, sliced and frozen
2 scoops cookie dough whey protein
1/2 cup coconut cream (chill a can of coconut milk overnight, then scoop out the "cream")
1/4 cup Meridian smooth cashew butter
2 drops Capellas graham cracker (or substitute for vanilla extract)
Handful dark chocolate chips
Method:
1) Blend all ingredients (except the chocolate chips) in a food processor until smooth. Stir in the chocolate chips, then pour into lollipop moulds. Place in the freezer until set, then enjoy!
