Healthy Chocolate Chip Cookie Dough Fudge


Ahhh, this fudge does all kinds of crazy things to me. Right now, I seem to be making it most weeks - and I never, ever stop at just one piece.

Nope.

In fact, I don't stop at two either...

Six slabs later, and I'm still gobbling it down. It's just that good.

I don't know whether or not you've tried making raw fudge before, but it's about time you tried because this is ridiculously tasty! Made using cashews as the base, you can have a play with the ingredients and make whatever flavours take your fancy.

However, this Chocolate Chip Cookie Dough version is my ultimate favourite. I make two versions of this (a double chocolate flavour, and a regular cookie dough flavour), although each is as delicious as the last. Don't believe me? Just try it for ultimate foodie heaven...

HEALTHY CHOCOLATE CHIP COOKIE DOUGH FUDGE

Raw Chocolate Chip Cookie Dough Fudge

Ingredients:
For the vanilla cookie dough:
1.5 cups cashew nuts
2 scoops cookie dough protein powder
1.5 tbsp coconut flour
4 tbsp honey
4 tbsp melted Lucy Bee coconut oil
Handful dark chocolate chips
2 Freeist sugar-free chocolate chip cookies, crumbled
1-2 drops Capellas sugar cookie flavouring (or use vanilla extract)

For the chocolate cookie dough:
1.5 cups cashew nuts
2 scoops First Protein chocolate casein
1.5 tbsp Creative Nature cacao
4 tbsp honey
4 tbsp melted Lucy Bee coconut oil
Handful dark chocolate chips
2 Freeist sugar-free chocolate chip cookies, crumbled
1-2 drops Capellas chocolate fudge brownie flavouring

Method:

1) Blend the cashews until they form a dough-like texture. Then add the rest of the ingredients (except the cookies and chocolate chips) and blend until smooth. Stir through the chocolate chips and cookie pieces, then tip into a lined loaf tin and smooth over / flatten with a spoon. Place in the fridge to set, then cut into squares and enjoy.
