Oh, boy. Is this a special cake, or is this a special cake.
Gooey, chocolatey, rich and oh-so decadent, you'd have every right to think that this Nutella Protein Pudding was bad for you.
Except, it isn't. Not even slightly...
Free from refined sugars and low in carbs, this cake is about as healthy and as 'clean' as cakes come, but without any sacrifice on taste whatsoever. In fact, this cake (the size of of your head) was so delicious that I ate 3/4s of it in one go, and had to hide the rest. YUM.
I created this version with my own homemade protein Nutella, as well as Multipower's delicious ready-to-drink chocolate Protein drink (FYI, Multipower make these seriously yummy reduced sugar protein bars, you must check them out in you're a low-carber). You could always use almond milk for a dairy-free option, but I much prefer it this way!

NUTELLA PROTEIN PUDDING
Ingredients:
1 cup almond flour (I use Sukrin fat-reduced almond flour, from Protein Pick and Mix)
2.5 tbsp Creative Nature cacao powder
2 tbsp coconut sugar
1 tsp baking powder
0.5 tsp bicarbonate soda
4 tbsp homemade protein Nutella (click here for my recipe) or hazelnut butter
2 tbsp dark honey
8 tbsp Multipower chocolate protein drink (or use almond milk)
4 squares Freeist sugar-free hazelnut chocolate, chopped
Method:
1) Preheat the oven to 200C, then grease a baking dish. Mix together the almond flour, cacao, coconut sugar, baking powder and bicarbonate of soda in a bowl.
2) Pour the honey and Nutella into a ramekin or bowl, then heat gently in the microwave until melted and runny. Stir in the chocolate or almond milk, then mix into the almond flour bowl and stir until combined.
3) Pour the cake mix into the baking dish, then stir through half of the chopped chocolate - set the remaining chocolate aside. Bake in the preheated oven for 15-20 minutes or until almost cooked (you want it still molten in the centre so it's gooey), then scatter over the remaining chocolate and serve.
