Elephant Superfood Snacks and my Favourite Smoothie Bowl


Wherever I can, I like to make my own snacks and foods for that dreaded afternoon slump. You know, the time of the day where you can barely stop your forehead from whacking the keyboard, and your eyes resemble pinpricks.

However, sometimes there aren't enough hours in the day to work, look after two babies AND make up healthy foods to get me through. Sometimes, a girl needs a few secret weapons in her handbag...

Step forward Elephant Superfoods, my favourite new pre-bought snacks - ready to make you stop slumping and keep on jumping! Elephant has a delicious range of three superfood snack packs (take your pick from Super Charged Chomp, Nuttin' But Energy, and Brilliant Berry Boost), each of which are loaded with nature's most nutritious, delicious ingredients.

My absolute pick of the lot is Nuttin' But Energy - a delicious, granola-esque snack pack full of raw ingredients. Inside each bag are raw cacao nibs (naked chocolate and chock-full of antioxidants), energy-loving cashews, brazils and tamari almonds, organic coconut nectar (low in GI so it prevents a huge insulin spike), protein-boosting chocolate-coated buckwheat and sunflower seeds.

Honestly, I am so in love with these moreish, delicious snacks that they almost seem too good to be true (except they aren't). The problem is, they're a little bit too addictive and I can't stop at just one (or six) handfuls.

I've also discovered that they taste amazing added to homemade granola or sprinkled over smoothie bowls (check out my recipe below). Anyway, I'm off to order some more, pronto...

BERRY SMOOTHIE BOWL


Berry Smoothie Bowl

This berry smoothie bowl is wonderfully nourishing and packed with essential vitamins and minerals. The Nuttin' But Energy and cacao nibs sprinkled on top add texture and crunch, but you can add whatever takes your fancy – and gym lovers can add protein powder too. Think of it as your get up and go!


Ingredients:
150g frozen berries
1 ripe banana, sliced
1 raw beetroot, sliced
1 tbsp nut butter or 1 scoop protein powder
1 tsp acai powder (optional)
100ml almond or coconut milk
Granola and cacao nibs to top

Method:
1) Blend the berries to a puree in a high-powered processor, then add in the rest of the ingredients and blitz until smooth. Pour into bowls, then top with fruit and granola. Enjoy!
