For me, one of the greatest pleasures in life has to be slouching on the sofa and dunking a GIANT, chocolatey cookie into a mug of tea. I mean, who doesn't love that?
But however much I'd love to lounge about all day eating cookies and watching box sets, it's not going to happen. Not only would my poor old son go insane, but I'd also be the size of a house. Probably two houses (yes, I love biscuits -that- much, you see).
However, these healthy Dark Chocolate and Oat Nut Butter Cookies are brilliant for those all-too rare moments when you can pour yourself a cuppa, put your feet up and simply relax and unwind. Yet as unhealthy as they may look, I promise you that these will not break the diet.
Containing oats, nut butter, a smudge of honey and coconut oil, these beauties taste delicious, but they aren't going to damage your waistline. I promise.
Now all you need is a free half an hour and someone to pour you a brew...

DARK CHOCOLATE AND OAT NUT BUTTER COOKIES

160g oat flour (or oats, finely processed)
35g oats
1 tsp baking powder
3 tbsp coconut oil, melted
3 tbsp honey
2 tbsp almond milk
60g smooth nut butter (I have used both peanut and almond - both were yummy)
Handful raisins
Handful dark chocolate chips (I used 99% cocoa)
Pinch salt
Method:
1) Preheat the oven to 180C, then grease and line a baking tray. In a large bowl, mix together all of the ingredients (for ease, I melted the peanut butter, coconut oil and honey together) until well combined. Roll into balls and place on the baking tray, flattening ever so slightly. Bake for around 8 minutes, or until golden brown, then leave to cool before gobbling down.
