Ever since my mum bought me Dale Pinnock's amazing Medicinal Chef cookbook for Christmas, I have been absolutely hooked. Detailing all the amazing properties of food (and the various diseases and conditions which foods can fight, including acne and depression), the book has become my bible and I can't recommend it enough.
Anyway, one of my favourite, favourite recipes from the book is for these Healthy Chocolate Fridge Cakes. Don't they look absolutely beautiful? Almost too good to eat!

HEALTHY, YUMMY CHOCOLATE FRIDGE CAKES
Ingredients:
8 tbsp mixed seeds
3 handfuls dried berries
1 handful pitted dates
4 tbsp cocoa
1 tsp desiccated coconut
1 tsp cinnamon
4 tbsp coconut oil, melted
1 tbsp mixed nuts, chopped into halves or quarters
1 tbsp mixed dried fruit
Method:
1) Line a brownie tin with baking paper. Place all of the ingredients, except the nuts, coconut oil and dried fruit, into a processor and pulse to create a stiff mixture.
2) Pour in the melted coconut oil and blend into a paste. Press into the lined tin, smoothing over the top. Sprinkle over the reserved nuts and dried fruit, then decorate with extra seeds and berries if desired. Place in the fridge until set, then chop into squares and enjoy.
