Now, I know you're probably all thinking I'm mad. A pizza, made of cauliflower - I sound bonkers in my own head too.
But, honestly, just stick with me. This works. And if you try it, I guarantee that you'll love me forever.
Not only is Cauliflower Crust Pizza low in calories, but it's also great for those of you who follow the Paleo or 5:2 diets, or anyone who avoids gluten or grains like the plague. Made from grated cauliflower, egg and a little bit of low-fat cheese, this is utterly delectable and totally divine.
As you tuck in to your scrumptious-smelling pizza, you won't even realise that you're eating a load of cauliflower. In fact, you will completely forget. And while you shouldn't expect it to taste exactly like ordinary pizza dough, this is a damn good substitute and creates an authentic pizza taste.
So, all you need to do now is add your favourite pizza toppings, cook and enjoy. Smug in the knowledge that your pizza has all of the taste, and none of the guilt!

LOW-CARB, GUILT-FREE CAULIFLOWER CRUST PIZZA
1 tbsp coconut oil, melted
1/2 large cauliflower, grated
1 egg, beaten
160g low-fat mozzarella, grated
2 tbsp low-fat cheddar, grated
1 tsp onion powder
5 tbsp tomato puree
4 tomatoes, chopped
2 cloves garlic, diced
1/2 tsp chilli flakes
Fresh basil leaves, shredded
Optional toppings (cooked chicken breast, prosciutto, spinach, cooked peppers, mushroom - you get the gist!)
Method:
1) Preheat the oven to 220C. Line a pizza tray with baking paper, then set aside. Take your grated cauliflower, place in a bowl and microwave until soft (it took about 7 minutes in my 850W). Remove and leave to cool.
5 tbsp tomato puree
4 tomatoes, chopped
2 cloves garlic, diced
1/2 tsp chilli flakes
Fresh basil leaves, shredded
Optional toppings (cooked chicken breast, prosciutto, spinach, cooked peppers, mushroom - you get the gist!)
Method:
1) Preheat the oven to 220C. Line a pizza tray with baking paper, then set aside. Take your grated cauliflower, place in a bowl and microwave until soft (it took about 7 minutes in my 850W). Remove and leave to cool.
2) Once cooled, throw in the egg, two-thirds of the mozzarella, and all of the cheddar, then mix well. Season, then place in the pizza tray, shaping it to fill the tray. Use a pastry dish to brush over the melted coconut oil, then bake for 15 minutes, or until golden.
3) Now is the time to throw on your toppings, then bake for a further 10 minutes until bubbling. Sprinkle over shredded basil and enjoy.
