Baking With Kids - Easy Peasy Chocolate Tiffin & Cookies And Cream Peanut Butter


Every now and again, I like to throw in a baking with kids post.

To me, baking (and, of course, eating the creations!) is one of the great joys of childhood. I don't think there's anything quite so exciting as a child as throwing around flour so that it clouds the walls, eating cake batter straight from the bowl and then watching your cakes rise in the oven. Magic!

Anyway, these simple recipes are brilliant ones to create with your children (or on your own!) this summer. No oven required!

The Chocolate Tiffin is my own twist on a classic and is pretty much a hybrid Tiffin / Rocky Road. A Chocolate Riffin, if you like. Meanwhile, the Cookies And Cream Peanut Butter is probably the best spread and nut butter you will ever eat.

I know that I am forever droning on about PB as a healthier snack option, but this one...not so much. Containing a whole packet or Oreo cookies and white chocolate chunks, this is definitely one for treat days.

EASY PEASY CHOCOLATE TIFFIN

Ingredients:

110g butter, softened
2 tbsp white sugar
2 tbsp golden syrup
4 tsp good quality cocoa
225g Rich Tea or Digestive biscuits, crushed
2 handfuls mini marshmallows
150g dark chocolate
150g milk chocolate

Method:

1) Line a Brownie tin. Melt together the butter, sugar, cocoa and golden syrup. Once melted, stir in the biscuits, raisins and marshmallows until combined.

2) Pour the mix into the tin, then press to flatten. Melt the chocolate in the microwave in 30 second blasts, then pour over the tin. Leave to set in the fridge, then cut into squares.



COOKIES AND CREAM PEANUT BUTTER

(Adapted from Averie Cooks)

Ingredients:


400g honey roasted peanuts
One pack Oreos
1 tbsp cinnamon
1/2 tsp vanilla
200g white chocolate

Method:


1) Using the high setting on a food processor, pulse the peanuts until creamy (around 5 minutes).

2) Add the cookies, cinnamon and vanilla and continue to blitz for a few minutes until combined. Add the white chocolate and blend until almost creamy, but not quite (just under a minute) - you want a few stray chunks here and there!

3) Pour into a container and enjoy!
