Wow, have I got a treat for you ladies today! Although your skinny jeans may end up cursing me, don't worry - this is well worth the calories. In fact, I'd happily get fat on this recipe...
Anyway, I first made this Peanut Butter and Oreo Cookie Bark last week, but it's already winged its way to the top of my favourite recipes EVER. Yes, ever. It had hubby in squeals of ecstasy, while I just sat wolfing it down in an almost awed silence. It's THAT good.
Combining three of my best-loved ingredients - Oreos, chocolate and peanut butter - it was always going to be a winner. I mean, what's not to love? You have the bitter-sweet layer of dark chocolate, the gooey, rich peanut butter frosting, and the scrumptious crunch of the Oreo biscuits.

Anyway, this bark is pretty much like Millionaire's Shortbread, only three thousand times more delicious and three thousand times easier to make. I promise you that it's worth the time it takes to set...it really is delicious!

2 packets chocolate stuffed Oreo cookies
6 - 7 tablespoons unsalted butter, melted
For the frosting:
Smooth peanut butter, to taste (I tend to use about half a jar)
120g butter
250g icing sugar
Up to 3tbsp milk
For the topping:
200g dark chocolate, or a mix of milk and dark
Scattering of Oreo crumbs to decorate (optional)
Method
1) Blitz the Oreos in a food processor until they are finely ground, then stir in the melted butter until it all starts to come together. Scoop the mixture into a lined brownie tin and press down until it's compacted.
2) I generally make frostings to taste (sometimes I want it smoother, other times sweeter), but this is roughly it - place the butter and peanut butter into a mixing bowl and whizz through with an electric whisk. Gradually stir in the icing sugar (tip it all in and you'll get a sugar cloud EVERYWHERE!) and, when it starts to thicken, slowly add the milk until you have it to the taste and texture you want.
3) To get my frosting nice and gooey and caramel-like, I heated it very, very gently before pouring onto the base. However, you can spread it over the Oreos cold - it's just as yummy! Leave to set in the fridge (this takes at least an hour).
4) Once set, get started melting your chocolate. You can do this in a bain marie, but I tend to do it in 25 second blasts in the microwave - much, much easier! Once the chocolate has nearly all melted, remove from the heat and whisk until smooth.
5) Pour the melted chocolate over your set base, then sprinkle over the Oreo crumbs if you fancy. Place back in the fridge and leave to set, before cutting into squares (they do break easily, I'm yet to get a perfect square) and devouring. Divine!
